With ceiling-height windows that open fully, green oak beams, and luxury Mulberry Home interiors, we hope to bring you one of Dorset’s most memorable and unique dining experiences.
Head Chef Stephan Guinebault’s ethos lies at the heart of all he does. When Stephan joined Priory Wareham in 2006, he brought a wealth of knowledge and experience, which all stemmed from growing up on his grandmother’s (grand-maman) farm in the Loire Valley, and her cooking. Motivated by his love of (her) food, he started work as an apprentice chef while simultaneously attending catering college. He progressed through Michelin and Relais & Chateaux establishments in France, gaining invaluable classical training and an understanding of regional dishes and techniques. Today, Stephan’s passion for food is as evident as ever. He thrives on using fine, locally sourced, seasonal produce, with a guaranteed provenance.

Produced locally in Dorset, English Oak Vineyard at Lytchett Matravers and Gusbourne Vineyards in Appledore, Kent both wines are made from a blend of the classic Chardonnay, Pinot Meunier and Pinot Noir grapes. Great wines, why not try some for that perfect celebration.
A new page in our expanding wine list. We feel the need to shout about our English section as it really is rather wonderful. We are very lucky living on the Jurassic coast surrounded by some fantastic vineyards using all of today’s methods but with the same basic principles and amazing grape varieties. We are starting close to home with some delightful Sparkling wines from Lytchett Matravers, before moving down the coast slightly to the now World-renowned Furleigh Estate just outside of Bridport, a quick skip into Devon and the Dart Valley before a final, at least at present, last jaunt over to Kent for some supremely good fizz from Gusbourne. We hope you enjoy exploring our offering as much as we enjoyed tasting them for you!
The town of St Emilion is surrounded by vineyards sloping away gently towards the South. The wines are very easy to drink and very smooth.
There is no better way to round off a fantastic meal than to indulge in a glass of Sauternes with your pudding, just wonderful.
The light, delicious, fruity wines from the beautiful Beaujolais hills are perfect for summer drinking. They have an abundance of marvelous raspberry-like Gamay fruit and are as good chilled, as the French drink them, as they are at room temperature.
Beaune, some say is the hub of Burgundy, famous for the Hospices de Beaune yearly auction it is the home of many renowned names such as Volnay & Chassagne, but here the grower is all important, we list a few top names for your enjoyment.
Chablis produces wonderful wines, it is not White Burgundy, the area of produce is an island almost midway between Paris & the Cote d’Or an area subject to spring frosts. The grape variety is Chardonnay, the soil is chalky & gravely producing wines which have lovely minerality & fresh crisp flavours.
The Loire, France’s longest river, meanders past the many famous vineyard areas and fairy tale castles on its way to the sea.
From Muscadet in the west to Sancerre and Pouilly Fume in the east it offers a host of wonderful wines of differing styles.
lsace is one of the prettiest, and the most gastronomically rewarding and least known wine producing areas in France.
Lying on the lower slopes of the Vosges mountains, the vineyards are blessed with wonderful sunny days and just the right amount of rain to produce lovely characterful wines. The area has changed hands many times over the past 150 years between France and Germany, this has made the culture of winemaking different from the rest of France.
We are pleased to offer a selection of wines from the house of Jean- Baptiste Adam which has been in existence since 1614 with vineyards in many of the best areas around the village of Ammerschwihr.
Please kindly note, that our wine list and drinks menu change frequently, so this sample is subject to changes in wine, vintage, and price. If you would like to check the vintage or availability of a particular wine on our list before your arrival, please contact our reservations team.
Produced in the Beqaa Valley just 20 miles from East Beirut Chateau Musar was first created 1930 by Gaston Hochar the family have continued to make this outstanding wine throughout these troubled times.
Our offering of wines from California are from the Napa Valley, one of California’s most famous wine producing areas. Ca’ Momi is run by three Italians, Dario, Valentina & Stefano, their Chardonnay is from the vineyards of Carneros. Our Zinfandel made by For di Sole has soft juicy fruit with long flavours.
Another wine producing country where finding the smaller grower is often the route to quality wine. The pioneering Rose family have been producing great Sauvignon Blanc in Marlborough since 1970, Kia Schubert in Martinborough purchased his first vineyard in 1998 & the boutique wines of Mount Difficulty in Central Otago on the Felton Road is the place for premium Pinot Noir.
Choosing has been great fun, drinking them will be even better.
A Dutch Surgeon Jan van Riebeeck produced his first grape in about 1659, South Africa is not ‘New World’.
Our selection includes award winning Chardonnay from De Wetshof one of the earliest settlers, arriving at the Cape in1694, wine from the carbon neutral Estate of Backsberg in Paarl who have produced wine since 1918 & one of the very few South African organic producers
Laibach in Stellenbosch. All to be enjoyed.
